Ingredients

    2 cans Campbell's Tomato Soup
    2 cans milk
    1/4 of one medium onion
    16 baby carrots
    1 red bell pepper
    2 Tbsp. butter
    salt and pepper to taste
    2 oz. gouda cheese

Directions

Slice onion and bell pepper into chunks. Place with carrots on baking sheet. Brush with melted butter and season with salt and pepper. Bake at 350 for 15-20 minutes. Place cooked vegetables in 2 quart pot on stove with soup, milk, and cheese. Bring to boil over medium heat and simmer 10 minutes, stirring occasionally. Puree in batches and serve hot.
