Introduction

Ingredients

    1 tbsp olive oil
    24 oz moose meat, cut into small chunks
    1/2 medium onion, chopped
    3 medium carrots, small dice
    3 celery stalks, small dice
    3 garlic cloves, minced
    6 oz red wine
    5 cups water
    8 tsp beef bouillon concentrate
    0.4 cups pearl barley, raw
    2 bay leaves
    salt and pepper to taste

Tips

The bouillon is quite salty so wait until the end of cooking to add more salt if desired.


Directions

Cook moose in olive oil, set aside. De-glaze pan with a splash of red wine.
Add onion, carrots, celery and garlic, cook until tender. Add the rest of the wine, water, bouillon, barley, bay leaves and salt and pepper. Let simmer for about 1 hour or until barley is cooked. Remove bay leaves before serving.
