Ingredients

    3/4 cup whole wheat flour
    3/4 cup unbleached white flour
    2 teaspoons baking powder
    1 teaspoon baking soda
    1/8 teaspoon salt
    1/2 cup granulated fructose
    2/3 cup lowfat vanilla yogurt
    1 cup orange juice
    6 tablespoons liquid egg whites
    1 cup chopped fresh cranberries
    1 cup chopped walnuts

Directions

In large bowl combine flours, baking powder, baking soda, and salt. Add 1/4 cup granulated to fructose to cranberries and chop finely. In another bowl, combine rest of granulated fructose with yogurt, egg whites, and orange juice and whisk until frothy. Add liquid ingredients to dry ingredients and blend gently until moistened. Fold in chopped cranberries and walnuts. Fill greased muffin cups 3/4 full and bake at 400˚F for 20-25 minutes.
