Introduction

Vegetarian burger substitute. Use for tacos, enchiladas, soups, pizza, etc. Yields 6 cups or 12 servings Vegetarian burger substitute. Use for tacos, enchiladas, soups, pizza, etc. Yields 6 cups or 12 servings
Number of Servings: 12

Ingredients

    2 cups bulgur wheat
    2 cups water
    1/2 cup walnuts
    1/2 onion, quartered
    1 clove garlic
1 tbsp. All-Purpose Seasoning (recipe attached at end)
    1 tsp. salt

Directions

Place bulgur wheat in a saucepan. Process remaining ingredients in a blender until smooth, then pour over bulgur wheat. Cook over low heat for about 5 minutes, stirring frequently. Turn off heat and let stand about 20 minutes. Spread evenly on a cookie sheet and bake at 250*F for about 1 hour, or until mostly dry. Freezes well.

(I make a double batch, freeze some and have some in the refrigerator for misc. meals I can add this too. I pretty much use this in place of most anything that would call for ground hamburger. It is absolutely great in chili and spaghetti sauce. I compare it to Crumbles, but is much more economical)

All-Purpose Seasoning:

2 tbsp. onion powder
2 tbsp. parsley flakes
1 tbsp. celery salt
1 tsp. turmeric
1/2 tsp. garlic powder
1/4 tsp. marjoram
1/4 tsp. savory

Combine all ingredients and mix well. Store in an airtight container. Yields 13 tsps.

Number of Servings: 12
