Quick and easy chicken recipe that can be broiled in the oven or grilled on the barbeque. Great served with grilled vegies of your choice and a salad or brown rice. Ingredients

    3 Boneless Skinless Chicken Breasts - cut into chunks
    Marinade:
    1/4 cup Olive Oil
    1/8 cup (2 tbsp) Lemon Juice
    3 Garlic Cloves Crushed or 1 tbsp minced garlic (use to taste - we are HUGE garlic lovers so we add a lot of it)
    1 tbsp fresh Rosemary or 1/2 tbsp dried
    1 tbsp Balsamic Vinegar
    1 tbsp Chili Pepper Flakes (optional)
    2 tsp sugar or honey
    Salt & Pepper (dash of each) optional

Tips

If you don't like Rosemary you can substitute any herb you like - some good ones are thyme or basil.


Directions

In a small bowl, combine oil, lemon juice, garlic, rosemary,balsamic vinegar, sugar/honey, red pepper flakes, pepper and salt if desired, reserve half of marinade for basting; cover. Skewer the chicken chunks and place in an 11-in. x 7-in. x 2-in. glass baking dish. Pour remaining marinade over chicken. Cover and refrigerate for at least 2 hours. Drain, discarding marinade. Place skewers on grill over medium-low coals. Grill, turning and basting with reserved marinade, for 12 minutes or until juices run clear.
If baking in oven place skewers; preheat oven to Broil. Place skewers on broiling pan, turn once and baste with reserved marinade for 12-15 minutes or until juices run clear.

Serving Size: Makes 4-6 skewers (depends on the size of your skewers)
