Applesauce, sweetened, 250 grams
Red table wine, sweet, 12 oz
Prunes, dried, 30 grams
Dates, 15 grams
Raisins, 80 grams
Canned cherries, 80 grams
Molasses, 20 grams
Allspice, 1 tbsp
Almonds, 50 grams
Cinnamon 1 tsp
Nutmeg 1 tsp
Baking Powder, 5 grams
Plain white flour, 180 grams
Yellow Cornmeal, 20 grams
Whiskey, 10 grams
Directions
recipe starts from mid november when all the dried fruit are placed in a tighly sealed container with the red wine to soak.
baking day:
set oven to 30 degree F or 170 degree C
put a pan full of cold water on bottom shelf of oven
grease a 10 inch pan and set aside
mix butter and sugar until creamy
add in eggs and mix more
add in dry ingredients slowly, portion by portion
puree fruit-wine mixture and then add to dry ingredients
add in the whiskey
place batter in pan
place in oven
bake for approx. 1.75 to 2 hours
take out of oven and let it sit for 3-4 hours
pour small portions of rum on it
cover with foil
for the next 2-3 days keep pouring small bits of rum onto cake for about a week
ready!
