Introduction

This soup is a great way to use leftover radish tops from the farmers market or your garden. This soup is a great way to use leftover radish tops from the farmers market or your garden.
Number of Servings: 6

Ingredients

    2 teaspoons olive oil
    1 large onion, diced
    1 Garlic clove
    2 medium potatoes, sliced
    4 cups raw radish greens
    2 cups vegetable broth
    2 cups water
    1/3 cup milk (low fat) or replace with soy milk for a vegan version
    5 radishes, sliced
    Celery Salt to taste
    Fresh ground pepper to taste

Directions

1. Heat olive oil in a large saucepan over medium heat. Stir in the onion and garlic, and saute until tender. Mix in the potatoes and radish greens, coating them with the olive oil. Pour in vegetable broth and water. Add celery salt and pepper. Bring the mixture to a boil. Reduce heat, and simmer 30 minutes.
2. Allow the soup mixture to cool slightly, and transfer to a blender or use a hand blender. Blend until smooth.
3. Return the mixture to the saucepan. Mix in the milk. Cook and stir until well blended. Serve with radish slices.

    Very Good
    I wasnt very sure how this recipe would turn out, but I wanted to use the radish tops so gave this a shot. Wow, this turned out really good, my husband had it the next day cold and said it was still really good (which he is kinda picky). - 3/8/11
