2 cups of fresh Spinach
1 slice of Bacon, crumbled (preferably maple or other sweet-smoked flavors)
1 1/2 - 2 tbsp of Walnuts, chopped
1 1/2 - 2 tbsp of Almonds, chopped
2 tbsp Honey Mustard Dressing
1/2 Chicken Breast, no skin, bone and skin removed
Tips
Be sure to heat the dressing as this thins it out a bit and helps the dressing toss in with the spinach and other ingredients much easier. By warming the dressing, I end up using less than one tablespoon for my salad, but I have slated one and a half tablespoons for those that like to be generous with their dressing.
To save 55 calories, cut out the almonds and keep the walnuts; to save 80 calories, cut out the walnuts and keep the almonds.
Use bacon bits to cut down the calories from 36 calories for just one slice of "real" bacon to 25 calories with a tablespoon of bacon bits versus one slice.
This last tip is for those that do NOT care about the nutrition content... to give the whole salad a really meaty taste, add two teaspoons of bacon fat/grease to the dressing while warming it up.
Directions
2. Baste the chicken in honey mustard and grill until done. You will use about 1/2 tablespoon doing this - the remaining is for dressing the salad. Slice up the chicken breast thinly.
3. Warm the remaining honey mustard dressing on the stove or in the microwave, then toss the bacon, walnuts, and almonds, then top with chicken.
