Introduction

This will provide a soft dough for two pizzas in two jelly roll pans or four pizzas in four 9x13 pans. This will provide a soft dough for two pizzas in two jelly roll pans or four pizzas in four 9x13 pans.

Ingredients

    3 C lukewarm water
    2 T active dry yeast
    1/2 tsp sugar
    8-10 C flour
    1 T salt
    4 T extra virgin olive oil
    1 T unsalted butter at room temperature

Tips

Some of this dough can be formed into a loaf. I have also cut it into strips and tied them into a knot for rolls as well.


Directions

Combine water, yeast, and sugar in bowl of stand mixer. Allow to rest for 3 minutes. Stir and allow to rest another 10 minutes. Add the oil and stir.
Mix 2 C flour and salt. Add to the yeast mixture. Stir together.
Change to a dough hook. Gradually add remaining flour until you have a soft dough that can be handled.
Flour hands, form dough into a ball and knead, adding flour if necessary, until it is smooth and elastic.
Place in bowl greased with the butter. Cover and allow to rise until doubled (about 1 hour).
Punch down and divide according to the number and size pans you are using. Pans should be greased with olive oil.
Roll out to fit pan. Stretch to fit if necessary.
Spread sauce on dough and add whatever other toppings you wish.
Bake in 500 degree oven for up to 30 minutes. Check after about 15 minutes. Ovens to vary and some have hot spots that may cause the crust to burn.
