Ingredients

2 cloves garlic, minced
1 block extra-firm tofu, dried and cubed
2 tbsp olive oil
3 tbsp low-sodium soy sauce
1/2 cup reduced-calorie orange juice (like Trop 50)
2 tbsp rice vinegar
1/4 cup sugar-free orange marmalade (I prefer Polaner for the added fiber)
1/2 tsp minced ginger (preferably fresh)
1 1/2 tsp cornstarch, dissolved into 3 tbsp water
Tips
If you want a thicker sauce, simply add more cornstarch during the boiling phase. Brown sugar (or Splenda brown sugar blend, for no calories) can also be added to increase sweetness.
Directions
Sautee tofu and garlic in olive oil for 3-4 minutes, until tofu is just lightly browned.
Stir in soy sauce, orange juice, rice vinegar, marmalade and ginger, whisking to combine and coat tofu.
Heat for 3-4 minutes, then add cornstarch and water, stirring to combine. Bring to a boil and cook until sauce thickens.
Great over brown rice or with mixed veggies!
Serving Size: divide into 4 equal portions
