Introduction

Make the night before and cook in the morning! Make the night before and cook in the morning!

Ingredients

    4 eggs
    1 can evaporated skim milk
    salt and pepper
    4 Trader Joe's hash browns, or 3 cups of shredded hashbrowns
    1 cup of diced ham
    1 green onion
    3/4 cup shredded cheddar cheese

Tips

Bacon, Canadian Bacon, or sausage could be used instead of ham.


Directions

beat eggs and evaporated milk together. Add salt and pepper. Put the hashbrowns in the bottom of an 8 x 8 dish and sprinkle the diced ham, cheese and green onions on top. Pour the egg/milk mixture on top of that. Cover overnight and bake in a 375 degree oven for 50 mins.
