Ingredients

    1.25 C Flour
    1.50 C Sugar
    1t Baking Soda
    .75 t Salt
    .50 t cinnamon
    .50 t Nutmeg
    2 Large Eggs
    .25C Water
    .50 C Canola Oil
    1 C Pumpkin (canned)

Tips

Can add nuts, dates, chocolate chips, raisins, dried cranberries, etc


Directions

Mix together, flour, sugar, soda, salt, cinnamon, & nutmeg into a large bowl. Make a well in the center of dry ingredients. Add eggs, water, oil, & pumpkin. Use slow speed on electric mixer until combined, then high speed until smooth. If adding any 'extras' like nuts, fold in at this point. Pour into a greased, 9 inch bread pan. Bake at 350 degrees for 1 hr and 15 min or until toothpick comes out dry. Let cool for about 30 min, then remove from pan and cool longer before storing.
