Introduction

Combine eggs and milk into one bowl. Combine panko crumbs, parsley, pepper, and sea salt (optional). Dip each piece of chicken into milk mixture, panko mixture, milk mixture, and then again the panko mixture. Lightly brown chicken in a skillet with the olive oil until the outside is lightly browned. Place browned chicken into a casserole dish. Cover with Parmesan cheese, then spinach, and then spaghetti sauce. Bake at 375 for 20 minutes. Combine eggs and milk into one bowl.     1/2 cup panko crumbs
    2 egg
    1/2 cup milk
    1 tbsp dried parsely
    1/4 tbsp black pepper
    2 tbsp evoo
    2 cups spagetti sauce
    1/2 cup grated parmesan cheese
    1 cup fresh raw spinach

Tips

You can make with pasta, but we are using veggies as side dishes to limit our sugar/carb intake! My kids and husband are tough cookies when it comes to eating anything with veggies, but they loved this!!
