Ingredients

1x 500grams Can of smoked fish, you can also use fresh smoked fish.
1x Bunch of spinach
1x Leek
2x Spring Onion stalks
1/2 Red capsicum
1/2 Yellow capsicum
1x Raw Onion *diced
3tbsp of cooking oil
FOR THE SAUCE
2x cups of skim milk
50grams of Block butter
1/4 cup of Flour
2x slices of Colby Chesse
TOPPING
5X Medium sized potatos
1/4 cup of milk
25grams of Block butter
Directions
1.Boil potatos till cooked, drain, add milk and butter mash and set to the side.
2. Saute onion, spring onion, leek, red and Yellow capsicum till soft and translucent.
3. Lightly fry Spinach, place in bowl with sauted ingredients above.
4. Add the canned or freshly smoked fish to the bowl and seperate by flaking with a fork or you can use your fingers.
5.Make the sauce by melting the butter till bubbling add the flour add milk slowly while over a medium heat till it thickens add the chesse and stir till smooth, add to the bowl.
Mix all ingredients together and place in to a dish, add the mashed on top.
Place in oven for 30 mins on 200c till the mixture is lightly bubbling in the dish at the edges and the potato topping is brown and crisp.
