Introduction

Used up post holiday leftovers with this soup: made my own broth from turkey bones, celery from the veggie tray, onions, peppercorns, lemongrass, ginger and star anise. Ingredients

    4 quarts turkey broth
    1.5 cups Lentils, dried
    1.5 cups cooked turkey, chopped
    1.5 cups Carrots, raw, chopped
    1.5 cups Broccoli, chopped
    5 cloves garlic, chopped
    1 Tbsp oregano
    1 Tbsp thyme
    2 Tbsp soy sauce, low sodium
    1 Tbsp anchovy paste, optional

Directions

Bring turkey broth to a boil in a large stockpot over medium high heat. Add lentils and carrots and reduce heat to medium low. Simmer for 15-20 minutes or until lentils are to the texture you like. Add remaining ingredients and simmer over medium low heat for about 5-10 minutes or until broccoli is cooked to the texture you prefer.

Serving Size: makes 8 2-cup servings (approximately)
