Introduction

Like a pan cake, only savory and texturally very different. Fill them with sauteed mushrooms, ham and a bit of cheese. Great with a little HP sauce. Like a pan cake, only savory and texturally very different. Fill them with sauteed mushrooms, ham and a bit of cheese. Great with a little HP sauce.

Ingredients

    1 tsp. Yeast, instant
    1 Tb sugar
    1/2 tsp salt
    3 c oat flour
    3Tb scottish oats
    2 C warm water
    2 c non fat milk

    2 Tb melted butter

Directions

In bowl of a food processor, blend oats until they become a flour.
In large bowl combine all of the dry ingredients and stir to combine, add milk & water. Whisk until well blended.
Cover with plastic wrap tightly and allow to sit for 8-12 hours.
Remove wrap and add 2 TB melted butter. Mix .
Heat a griddle to med heat and spray with non stick. Carefully pour 1/2 cup batter onto griddle. Allow to become bubbly and when the edges look dry flip and cook another bit of time until cake is slightly rowned.
Remove from heat and cool completely on rack. Do not stack until cakesd are cooled. Place in zip lock bag and store at room temperate.

Serving Size: makes 11 7-8 in. cakes
