Number of Servings: 12

Ingredients

    3-4 tbsp of taco seasoning(more if you want spicer)
    2 tsp garlic salt
    2 tsp pepper
    3/4 cup water
    6 oz frozen chicken breast
    1 can fat free refried
    1 can of cheese sauce
    1/2 package of cream cheese
    1/3 cup of frozen corn
    1/2 can of diced tomatoes
    1/2 cup white rice uncooked

Tips

serve with whole wheat tortillas and shredded lettuce. hot sauce and extra cheese if you like, just watch the calories on the cheese.


Directions

throw everything in the crockpot, turn on high and cook. check at about the 2 hour mark and stir, checking that the rice has not settled at the bottom, this will cause it to burn. at about the 3 1/2 hour mark, take chicken out and shred, then return to pot and stir. Cook for at least 4 hours!
