Ingredients

    Canola Oil, 1 tbsp
    Celery, raw, 1 stalk, medium, chopped
    Onions, raw, 0.5 cup, chopped
    Garlic, 1 clove, minced
    Curry powder, 1.5 tbsp
    2 large sweet potatoes (yams), 2 cup, cubes
    Apples, fresh, 1 small, chopped
    Aurora Vegetable Bouillion cube
    Water, 8 cups
    Coconut Milk, from can, 0.5 cup

Tips

To serve, add dollop of plain yogurt, if desired.


Directions

Heat canola oil in skillet over medium heat, saute onion, celery and garlic until soft. Reduce heat slightly, add curry powder and stir to cook. Add bouillion cube to 1 cup of boiling water, stir to dissolve and add to skillet. Bring to a boil, stirring. Put cubes of sweet potato (yams) and apple in slow cooker, pour onion-celery-garlic mixture over the vegetables, add 7 more cups of water, and heat in slow cooker on high for 3 hours. Add coconut milk, and puree with immersion blender.
