Introduction

A healthy, light meal with a kick of flavor! I love to serve this over brown or wild rice. A healthy, light meal with a kick of flavor! I love to serve this over brown or wild rice.

Ingredients

    1 bunch Rainbow Chard - chopped leaves and stems (about 9 cups)
    1 15 oz. can Chickpeas (drained)
    1 medium red onion (diced)
    1 tbsp olive oil
    1.5 ounce white wine
    1 tbsp balsamic vinegar
    salt & black pepper
    chopped green onion (white and green parts)

Tips

I also like to add garlic and red chili flakes to spice things up!


Directions

Heat olive oil on medium heat in a deep skillet, add chopped stems and diced onions. Saute for 5-6 minutes. Add drained chickpeas, stir and turn heat to medium/high. Once heat is increased, add white wine and immediately add chopped stems. Use tongs to combine ingredients. Cover skillet and let greens wilt for 4 to 5 minutes. Toss with salt & pepper. Sprinkle with chopped green onions and serve.

Serving Size: Makes 4 - 1.5 cup servings
