Introduction

Just a fun stew, lots of colors, lots of taste, beef based but light on the beef! Just a fun stew, lots of colors, lots of taste, beef based but light on the beef!
Number of Servings: 12

Ingredients

    Base:
    Two cans diced tomatoes
    3 peppers (Green/Yellow/Red)
    1 Chopped Onion
    1 Lb Stew Beef
    1 Package baby carrots (Raw)

    Additions:
    1 Stick Butter
    Lightly Sauteed fresh mushrooms (8 oz)
    Thyme/Sage/Rosemary lightly sauteed

Directions

Begin cooking the vegetables (not onions or mushrooms) immediately. Lightly brown the meat, sautee the mushrooms, onions, and the fresh Thyme/Rosemary/Sage. Add garlic + spices to taste.

Serving Size: Makes 12 bowls of stew

    Looks good - I think to lower the carbs I would use only 1 can of tomatoes and add extra beef broth as needed, and I would substitute fresh green beans for part or all of the carrots. I might add in some rutabaga too. Also I might add oregano and a bay leaf. Hope to try this soon! - 5/31/16
