Introduction

A great, low-fat, non-greasy chili, full of vegetables and beans. A great, low-fat, non-greasy chili, full of vegetables and beans.

Ingredients

    1 lb ground beef
    1 onion
    2 bell peppers
    2 cloves garlic
    1 can low-sodium red kidney beans
    1 can low-sodium black beans
    1 can chopped tomatoes
    1 can tomato paste
    cumin
    chili powder
    salt/pepper to taste
    water
    chicken broth (optional)

Directions

Brown ground beef in a little bit of water. Add diced onions and bell peppers, then garlic, and saute until vegetables are soft. Add beans, tomatoes, tomato paste, and seasonings, then add water or broth almost to top of pot. Stir, then cover and cook on low for about 45-60 minutes.
