Ingredients

    Yellow Sweet Corn, 1 Can
    Beans, black, 1 Can
    Cherry Tomatoes, Fresh, 1 Pint
    Refried beans, vegetarian, 1 Can
    Baby Carrots, raw, 20 large (sliced and diced)
    Chicken Breast, 2
    Garlic, 3 cloves
    Organic Mushroom or Veggie Broth, 3 cups
    Hot Pepper Sauce, 2 tsp
    Cumin, 1 tsp
    Chipotle Pepper Spice, 1 tsp
    Salt, 0.25 tsp (optional)
    Pepper to taste

Tips

Play with the spices, I like a little more kick!


Directions

Add chicken to crockpot/slow cooker. Add refried beans and spread them over the chicken. Add the remainder of the ingredients into the slow cooker. Cook 4-5 hours on high or 5-7 on low. Stir once halfway. Very filling soup, and spicy! Can omit the chicken to make it vegan.

Serving Size: Makes 8 1-cup servings
