Ingredients

    Olive Oil, 2 tsp
    Ground Beef, browned, lean, 16 oz
    Onions, 1 medium chopped
    Garlic, 2 cloves, chopped
    Bell Pepper, chopped
    Mushrooms, 1 cup, chopped
    1 Can 14 oz Crushed Tomatoes
    Lemon Juice, 1 tsp
    Black beans, 1 can, rinsed
    Cumin, 1 tbsp.
    Cayenne Petter, 1/4 tsp
    Cilantro, dried, 3 tbs or 1/4 cup fresh
    Parsley, dried 3 tbsp, or 1/4 cup fresh
    32 Oz Low Sodium V8 Juice

Directions

Heat oil over med high setting, saute meat until done. Drain and set aside. Saute onions, peppers, mushrooms, garlic until soft.
Stir in all remaining ingredients except Parsley and Cilantro. Cover, simmer 20 minutes. Add parsley and cilantro, simmer another 10 minutes.
