Ingredients

    Ground Beef, browned, about 10 oz.
    Old El Paso Seasoning Mix
    Enchilada Sauce, 1 can
    Refried Beans, 1 can
    Black Beans, 1 can
    Corn, 1 can
    Chicken Broth, 1 cup
    Chopped Chili Peppers, 1 can
    Jalapeno, 1 pepper, chopped

Tips

Sometimes I use chicken in place of beef, which lowers calorie content. Use fat free cheese, sour cream, and baked tostitos to keep calorie count low. Family enjoys this, doesn't realize how low in calorie it is!


Directions

Brown ground beef, drain well.

Add remaining ingredients, bring to simmer, simmer for 10 minutes or until totally heated through and bubbly.

Add shredded cheese, sour cream, salsa or tostitos as desired. These are not included in calorie count.
