This is largely borrowed from Jamie Oliver's excellent Ministry of Food book. I've changed it a little bit but not that much. Ingredients

Cauliflower, raw, 1000 grams
Creme Fraiche, 400ml
Anchovy Fillets, Chopped 30 grams
Cheddar Cheese, 200 grams
Bread, whole wheat (including toast), 4 slices
Smoked streaky Bacon, chopped 200g
Olive Oil, 1 tbsp
Rosemary, Fresh Leaves only 2 tbsp
Tips
Use other cheeses but make sure they are firm strong ones. Add a bit of chili to bring out the flavour if needed. Leave out the bacon and add a bit more oil to make veggie.
Directions
Cut up Cauliflower into florets and throw away the stalk and green leaves. Boil this for 5 minutes in salted water. Drain.
In a bowl, mix the Creme Fraiche, Anchovies, 100g of the cheese. Add Salt and pepper to taste.
In a cooking machine, place the bread, bacon, oil and rosemary. Blend for a good while to make bread crumbs. OK - this looks more like a paste when you've done.
Put the cauliflower in a 9" by 13" baking tray, pour the sauce over this. Put the breadcrumb mix on top and then the rest of the cheese.
Put in a preheated oven (180 deg C/ 350 deg F) for 45 minutes until golden.
