Ingredients

    1 can black beans, rinsed and drained
    1 can corn, undrained
    1 can RoTel, undrained
    2 chicken breasts
    1 pkg ranch dressing mix
    1 tsp cumin
    1 tbsp chili powder
    1 tsp onion powder
    1 (8 oz) pkg light cream cheese

Directions

Drain and rinse black beans. Place chicken at the bottom of the crock pot, and pour the whole can of corn, rotel and rinsed/drained black beans. Top with seasonings and ranch mix. Stir together. Place cream cheese on top. Cover with lid and cook on low for 6-8 hours. Stir cream cheese into chili. Use 2 forks to shred chicken. Stir together and serve.

    I've made this several times, I found the recipe somewhere else online... so easy and so good! I'm happy to see calories aren't too high! Mine is definitely done after 5-6 hours, even with large chicken breasts. - 6/23/13

    So dang delicious. I added extra chili powder for personal taste and put over rice. Filling and super yummy! Great as left overs for lunches too. - 9/20/12

  • This recipe is so easy, and very tasty. My DH and I ate this with tortilla chips, our kids put it in a soft tortilla shell. Got thumbs up all around. Will be making again. - 3/27/18

  • Looking for quick prep and delicious!! This is it! Have made it twice before and the only deviation I made was northern beans instead of black beans. Got all my ingredients ready to start a pot in the morning for a cold Friday night! I serve as an entree with tortilla chips. - 3/9/18
