Introduction

This was my first time playing with chia seeds... and it was a success!! Tasty, filling, and healthy! Recipe as written is gluten free, vegan, low in fat, and just over 100 calories per serving. This was my first time playing with chia seeds... and it was a success!! Tasty, filling, and healthy! Recipe as written is gluten free, vegan, low in fat, and just over 100 calories per serving.

Ingredients

    1 can (14 oz.) pureed pumpkin
    2 cups Unsweetened Vanilla Almond Breeze
    6 tablespoons chia seeds
    1 TBSP stevia
    1 tsp maple extract*

    *Could easily replace with any flavor extract you want... vanilla, almond, etc.

Directions

Ridiculously simple: place all ingredients in a large bowl, adding chia seeds last, and mix with a whisk. Place in fridge to set for at least an hour.
