Creamed Soup Creamed Soup

Ingredients

    Onions, raw, 3 cup, chopped
    Leeks, 6 cup
    Chicken Broth, 6 cup (8 fl oz)
    Thyme, fresh, .25 tsp
    *Lemon Juice, 1 fl oz
    Half and Half Cream, 1 cup
    Mashed Potatoes, dehydrated, 1.5 cup
    Olive Oil, 4 tbsp
    Butter, salted, 1 tbsp
    Garlic powder, .50 tbsp

Tips

Leeks grow up through the soil, so they should be cut/sliced, separated and soaked in cool water. The dirt from the inside of the leek will sink to the bottom of the bowl. Remove the leeks off the top as they float, do NOT poor the water back through the leeks or you will be putting the dirt back into the leeks.


Directions

Heat a 8 quart stock pot over medium heat. Add olive oil, and butter, melt. Add onions cook until translucent and lightly brown. Add leeks and 1/2 cup water. Stir well and put lid on and turn down to medium low. Cook 15 minutes. Add chicken broth and seasonings, return to boil and simmer 45 minutes. Add potato flakes, stir to completely incorporate. Add 1/2 and 1/2. Taste and adjust seasoning - S&P TT.
