Ingredients

    1/2 butternut squash, peeled, seeded, and sliced
    1 bunch mustard greens
    1/2 large onion, sliced
    2 Tbsp olive oil
    1 tsp apple cider vinegar
    1 tsp brown sugar

Tips

Use a mandolin for slicing the squash.


Directions

Add oil to large pan, saute squash and onion until squash is just tender. Add mustard green, vinegar, and brown sugar. Cook until greens have just softened.

Serving Size: makes 4 side-sized servings
