Ingredients

Depending on how many people you are serving, one potato per person will be the ratio between how much olive oil and salt to put into the mixture.
Here's how I normally do it:
2 Yukon Gold potatoes (large, washed with skin on)
3 to 4 tablespoons of EVOO (extra virgin olive oil)
1 to 2 tablespoons of kosher salt
Directions
Makes 2 baked potatoes, one potato per serving.
Take the two Yukon Gold potatoes and prick them with the sharp point of your pairing knife and place them inside your crock pot. Pour the olive oil over the potatoes and roll the potatoes around to coat them evenly. Sprinkle in the salt and, once again, roll the potatoes to cover evenly. Cover the crock pot and leave it alone for 3 to 4 hours or until they are tender. Prick a fork in the potato deeply and if it lets go quite easily, it's done!
