    Cauliflower, raw, 1 head, large (6-7" dia) (remove)
    Butter, unsalted, 2 tbsp (remove)
    *Organic All-Purpose White Flour, 0.18 cup (remove)
    Milk, 2%, 2 cup (remove)
    Garlic, 1 clove (remove)
    Cheddar Cheese, 1 cup, shredded (remove)
    Red Star, Nutritional Yeast, Vegetarian Support Formula, 8 Tbspn (remove)
    Egg Yolk, 2 large (remove)
    1.5 cups fresh breadcrumbs
    1 pinch cayenne pepper


Preheat oven to 350F. Bring lg pot of salted water to a boil. Add cauliflower florets, and boil 5-7 minutes or until just tender. Drain, reserve 1 cup cooking liquid and set aside.
Melt butter in same pot over medium heat. Whisk in flour, and cook 1 minute, stirring constantly. Whisk in milk, garlic and reserved cooking liquid, and cook 7-10 min or until sauce is thickened, whisking constantly. Remove from heat, and stir in cheese, nutr. yeast, cayenne pepper and egg yolks until cheese is meltd. Fold in cauliflower.
Coat 13x9 inch baking dish with cooking spray. Spread cauliflower mix in baking dish, and sprinkle with breadcrumbs. Spray breadcrumbs with cooking spray. Bake 30 minutes or until casserole is hot and bubbly and breadcrumbs are crisp and brown.
