Introduction

Number of Servings: 4

Ingredients

    3 tablespoons dijon-style mustard
    1 tablespoon soy sauce
    1 (12 ounce) jar sugar-free peach preserves
    pork tenderloins up to 16 oz. total (either 2- 8 oz. tenderloins, ore 4 smaller ones)

    Note that pork is not included in the nutritional info due to variations of portion sizes.

Directions

preheat oven to 325 degrees. Combine mustard, soy sauce, and peach preserves in sauce pan. Heat & stir just until mixture blends.
Place tenderloins in greased baking pan and spoon peach mixture over top. Sprinkle a little salt and black pepper over tenderloin. Cover with foil, bake for 1 hour and remove from oven. Remove foil covering and return to oven for 25 minutes. Let sit at room temperature for about 15 minutes before slicing. Note that cook time is for 16 oz. of pork.
