Introduction

This "dummies guide" version of pumpkin soup is very easy with very few ingredients. I couldn't find a recipe easy enough for me to make when I was sick, so I just made one up myself. All the ingredients are approximations, so if you only have 14.5 oz. Chicken Broth instead of 16, or if you only have a 15 oz. can of Pumpkin, it's ok. Also, season to taste. I don't like a lot of seasoning, but maybe you do. Ramp it up if you like. Ingredients

    2 C Pumpkin Puree (fresh or canned)
    2 C Chicken Broth
    2 C Milk or Cream
    1/2 tsp ground cinnamon
    1/2 tsp ground nutmeg

Tips

be careful not to curdle the milk as you warm it up.


Directions

Heat pumpkin over low heat and add Chicken Broth and milk one cup at a time, mixing well before adding the next cup. Add seasoning and heat to steaming.

Serving Size: makes 8 servings of 3/4 cup each.
