Introduction

Ingredients

    1 Carton Southwestern Egg Beaters
    1/2 of a yellow or red onion, chopped
    8 spears of asparagus, bottoms cut
    1 cup raw spinach
    Garlic flavored Pam

Tips

You can also add add ground turkey sausage or any other low fat meat for more protein.


Directions

sauté vegetables in Pam. Add cook vegetables to 4 individual soufflé cups. Pour even amounts of Egg Beaters over the vegetables. Stir. Bake at 350 for about 25 min.
I like to make them ahead of time, put them in plastic bags and re-heat in the microwave for about 1-1/2 min. Sometimes I top them with my homemade salsa.
