Ingredients

2cup) sliced onion
1cup) sliced carrot
1cup) sliced celery
2tlbs) all-purpse flour
1/4tsp) salt
1/4tsp)pepper
2lbs) boness round stear, trimmed of fat and cut into 8 pieces
1tbsp) cooking oil
1/2cup) prepaired beef broth
2tbsp) all-purpose flour
14oz) roma (plum) tomatoes (with juce), tomatoes cut in half
1/2tsp) dried thyme
Directions
layer first 3 ingredients, in order given, in 3 1/2 to 4 quart (3to4) slow cooker.
Combine next 3 ingredients in large resealable freezer bag. Add 1/2 of beef. Seal bag. Toss unitl coated. Reapeat with remaining beef. Heat cooking oil in large frying pan on medium-high. Add beef in 2 batches. Cook for 2-3 min per batch, stirring occasionally, unil browned. Layer on top of celery.
Stir broth into second amount of flour in medium bowl unil smoth . Add tomatoes and thyme. Stir well. Pour over beef. Do not stir. Cover. Cook on low for 8-10hours or on hight for 4-5 hours. Serves 8.
