Ingredients

20 oz ground turkey
2 tsp garlic powder
2 tsp cumin powder (for meatballs) - I also added some to the soup
2 cups chopped cabbage
2 cans diced tomatoes
3 cloves garlic
2 jalepeno peppers chopped
bunch chopped cilantro (for garnish or added to soup during cooking)
3 tablespoons better than bullion chicken
9 cubes knorr chipotle bullion
8 cups water
Tips
Although very high in sodium, there are things you can do to cut this such as reduced sodium chicken broth, no sodium added diced tomatoes
Directions
Mix ground turkey w/cumin and garlic powder
roll into balls and cook in a skillet - spray pan with a little pam. To not distort shape of meetballs, I covered the pan with a lid and let them "steam" a bit to hold their shape
In a stockpot, spray a bit of pam and saute onions, jalepeno (seeds removed for less heat) & garlic until slightly tender - add cabbage, diced tomatoes, 8 cups of water, chipotle bullion and some chicken bullion too. You could sub the chicken bullion w/reduced sodium chicken broth to cut the sodium content. Add in cooked meatballs, bring to slight boil, reduce heat and simmer for about 1/2 hour
garnish with cilantro
