Ingredients

    Olive Oil, 1 tbsp
    Pancetta, 1 oz, chopped
    Carrots, raw, 1.5 cup, chopped
    Fennel, 1 bulb, chopped
    Onions, raw, 1 medium, chopped
    Thyme, fresh, 1 tsp
    Herb de Provence, 1/2 tsp
    Tomato Paste, 3 tbsp
    Chicken Broth, 5 cup
    Swiss Chard, 4 cup, chopped

Tips

i use kitchen basics broth...its the best! otherwise, it's probably best to choose a low sodium option. i also add about 1/2 tsp of herb de provence when i add the thyme...the builder didnt have it in the database.


Directions

in a large soup pot or dutch oven: brown pancetta in olive oil. meanwhile chop carrots, onion and fennel. add vegetables once pancetta is browned and crispy.
add salt & pepper and thyme - saute until translucent (about 7 or 8minutes). add tomato paste, cook a few minutes. add rinsed lentils and all the broth. bring to a light boil, then simmer with the lid on until lentils are soft...20 - 40 minutes. finally add cleaned, chopped swiss chard and cook until it is all wilted and combined. season again with salt & pepper if needed. serve.
