Ingredients

    Egg, fresh, 2 large
    *Green onion, fresh, 2 tbsp
    *Italian Sausage, pork, .5 link, 4/lb
    Cherry Tomatoes, Fresh, 1 Tomato, 5 serving
    Dill weed, dried, 1 tsp
    Salt, 1 dash
    Pepper, black, 1 dash

Tips

To save on cleaning, cook the sausage slices first in the pan and use the remaining grease to cook the egg mixture in. If you're cooking a frozen sausage, thaw and cook it partway and remove to make slicing easier before returning it to the pan.


Directions

Slice .5 sausage link and cook on medium in small pan. While it's cooking, whisk 2 eggs with sliced green onion. Slice cherry tomatoes in 1/2ths or 1/3rds. Remove sliced cooked sausage and dump out extra grease but don't wash the pan. Pour egg mix into pan and spread evenly. Season with dill, salt, and pepper. When the egg mixture is half cooked add sausage and cherry tomatoes into 1/2 the pan. When nearly done, fold the omelette on itself and press together. Serve and enjoy.
