Ingredients

    2 Cups Almond Flour (Meal)
    1/2 cup sugar equivalent (I used 2 T. Fiberfit, but 1/2 cup Splenda Granulated, or any other sweetener would work)
    1/2 cup (1 stick) butter, softened
    1 tsp. vanilla extract
    1 tsp. lemon extract
    1 egg


Tips

If you use liquid sugar substitute, like Fiberfit, these cookies have half a carb a cookie, and they taste great! They're also gluten-free and sugar-free. Substitute with different extracts to change the cookie flavor: I can't wait to try orange or cinnamon next.


Directions

Preheat the oven to 300 degrees. Cream the softened butter in an electric mixer. Add egg, liquid sweetener, and extracts. Stir in almond flour and granulated sugar substitute, if you used that. Using a tablespoon, spoon the dough onto a cookie sheet with parchment paper or silicon liner. Bake for 5 minutes, and if cookies aren't flattened enough already, flatten them with a fork. Return to oven and bake 18 more minutes. Cookies will not brown, but will be set.
