Introduction

"Creamy", low-fat broccoli soup "Creamy", low-fat broccoli soup
Number of Servings: 8

Ingredients

    1 med Onion, chopped
    1 TBSP Olive Oil
    2 bunches Broccoli, fresh, chopped
    2 med Carrots, raw, peeled and grated
    3 small Red Potato, peeled and grated
    3 vegetable bouillon cubes
    8 cups water


Tips

Naturally gluten and dairy free (if cheese is left out).


Directions

Heat olive oil in a large pot. Add onion and cook until softened. Add all other vegetables, bouillon cubes and water and cook until vegetables are tender. Puree with an immersion blender.

May be served with 1 TBSP of grated, low fat cheddar.
