Introduction

Indian-style soup. Indian-style soup.
Number of Servings: 6

Ingredients

    15oz chopped baby spinach
    1 large potato, peeled and cubed
    1/4c grated coconut (fresh or frozen, not the sweetened kind)
    6c vegetable broth
    3T minced garlic (about 2 cloves, or to taste)
    1 onion chopped
    2t ground cumin
    1t turmeric
    1T fresh ginger minced

    salt and pepper to taste.

Tips

This is also good with a bit of yogurt stirred into the bowl after serving (whatever unflavored kind you eat)


Directions

Saute onion in a bit of water in a heavy pan until translucent. Add ginger and garlic and saute 1 minute more. Add spices and cook 2-3m, stirring. Add spinach, potato and coconut, cooking until spinach wilts. Add broth, bring to boil. Reduce heat and simmer until potatoes. Puree soup until smooth, return to heat and cook 2 more minutes. Serve (I never puree...I like it chunky)
