Ingredients

    1 lb. ground pork
    1 Tbs. olive oil
    5 oz. baby spinach
    1 TBS curry powder
    7 oz. coconut milk

Directions

Brown pork in olive oil in a large skillet. When pork is almost brown, add curry powder. Add spinach and coconut milk and cook until spinach is wilted.
