Ingredients

1# Lean Ground Beef
2 Cups Shredded Cheddar or Colby Cheese
1/2 Onion, chopped
8-12 Corn Tortillas
3 cup Macayo Enchilada Sauce (28oz)
Salt and Pepper to taste
Directions
Brown ground beef with chopped onion till cooked through, season with salt and black pepper. (Drain off any fat). Add 1 1/2 cup of sauce to ground meat, stir till mixed. Add 1 cup cheese. mix and simmer for 5 mins.
In a 8x8 baking pan add 1/4 cup of sauce to bottom of pan.
Warm Corn Tortillas. Makes it easier to roll them.
Assembling Enchiladas:
Take 1 corn Tortilla, hold in one hand, add a spoonful (about 2Tbls) of the meat mixture to the middle. Then roll up. add to baking pan. Assemble remainder of the enchiladas setting them next to each other in pan. Add remaining Enchilada Sauce over the top of the enchiladas, top with remaining cheese.
Bake for 20 mins at 350 degrees or until heated through an cheese has melted.
