Ingredients

    app. 5-8 baking potatoes, chopped into 1" quarters
    2 packages beef stock
    2 packages diced ham
    4 cans green beans
    1 medium onion, chopped
    water to fill pot

Tips

This soup is very filling and work great in crock pot, too. Soup can be made with fresh green beans and bone-in ham to get more flavor. This recipe is the down-and-dirty working-mom version of an old family favorite!


Directions

best if cooked lower and longer so flavors melt together!
Start with a little olive oil, saute onions until just tender. add rest of ingredients, turn on medium-low and let cook for at least an hour, for as long as 3 or 4 hours. add stock or water to soup as needed to replace evaporated liquid.
