Ingredients

    1 Tbsp Olive Oil
    2 Tbsp Shallots, fine dice
    3 cloves garlic, minced
    1 cup cherry tomatoes, cut in half
    1 lb. Bay Scallops
    2/3 c white wine
    1.5 tsp Dijon Mustard
    3 Tbsp fresh parsley, chopped

Tips

Serve over angel hair or linguine pasta.


Directions

Heat olive oil in a saute pan. Add shallots and garlic, cook for 2 minutes. Add tomatoes, cook for 2 minutes. Add scallops, cook for 2 minutes. Add white wine, mustard and parsley, cook for 2 minutes. Serve.
