Ingredients

    1-package of McCormick White Chicken chili seasoning mix.
    1 tbsp olive oil
    1 lb boneless skinless chicken breasts, cut into 1/2 inch cubes
    1 cup water
    1-(15-16oz) can of white beans, undrained
    1-(15-16oz) can of chick peas, undrained


Tips

Top with chopped cilantro and low fat mexican blend of cheese or slice avocado. Get creative and mix in different types of beans, or add a can of corn instead of beans. You could also add a can of diced tomatoes with the beans for a different flavor. Add some diced onion and peppers or try crumbling part of a corn tortilla shell as a topping.


Directions

1. Heat oil in a large skillet on medium heat. Add chicken; cook and stir until no longer pink, approximately 5 minutes.
2. Add seasoning mix, water and beans. Bring to a boil; Cover and reduce heat to simmer 10 minutes, stirring occasionally.
