Ingredients

    1 egg, beaten
    1 cup shredded zucchini
    1/2 cup Oatmeal
    1 tsp salt
    1 lb lean venison or lean ground beef or turkey
    12 cubes cheddar cheese cubes
    2/3 cup ketchup

Tips

Serve with creamy macaroni and cheese and steamed broccali.


Directions

Pre-heat oven to 350
Spray 12 muffin tins with cooking spray.
Combine the beaten egg, zucchini uncooked oats and salt in a large bowl. Add the ground beef or turkey mixing well.
Divide the mixture into 12 equal portions. Insert one cheese cube into the center of each meat and roll around the cheese. Place each ball into the muffin tin and continue with the remaining meat and chees.
Make a tumb print in the top of each meat and place an equal amount of ketchup in each.
Bake uncovered on center oven rack for 30 minutes.
Store leftovers wrapped in the refridgerator.
