Ingredients

    2/3 cup salted butter
    ¾ cup granulated sugar
    ½ cup unsalted butter
    1 tablespoon crème fraîche or sour cream
    ½ cup mascarpone cream

Directions

In a sauce pan, arrange salted butter, sugar and one tablespoon water and let caramelize over high heat.
Remove from the heat and add crème fraîche. Let cool a few minutes.
Add unsalted butter, and stir until melted, then add mascarpone.
Whisk, let cool at room temperature and refrigerate.
