Ingredients

    4 cups apples, cored and peeled (apprx 1 Granny Smith plus 1
    18 oz can crushed Pineapple with juice
    1 Tbls flour
    1 egg, beaten
    1 Tbls white vinegar
    18 oz container frozen whipped cream, thawed
    1 cup coursely chopped dry roasted peanuts

Tips

Good diabetic recipie using Splenda and sugar-free whipped Cool Whip.
Apprx 175 calories per serving


Directions

In saucepan over medium heat, stir together the egg, flour, splenda sugar, vinegar and pineapple. Cook until thick, about 6 minutes. Cool

In large serving bowl, put together the pineapple mixture and whipped topping. Mix in the chopped apples and half of the peanuts.

Sprinkle remaing peanuts on top

Serving Size: Makes apprx 6 - 8 servings
