Ingredients

    1 cup uncooked quick oats
    1 cup all-purpose flour
    1 teaspoon baking soda
    1 teaspoon cinnamon
    1/2 teaspoon allspice
    1 pinch salt
    1/2 tsp. Ener G Egg Replacer and 2 Tbsp water mixed (or 1 egg)
    1/4 cup soymilk (or other milk)
    1/4 cup oil
    1/3 cup honey
    2 medium apples, peeled and finely diced

Tips

Use less apple for a smoother texture. If making mini muffins, bake for 7 minutes.


Directions

Preheat oven to 400. In a large bowl, mix oats, flour, baking soda, cinnamon, allspice and salt. In a medium bowl, mix egg replacer. Add soymilk, oil and honey to egg replacer and blend well. Stir medium bowl ingredients into oat mixture until thoroughly moistened. Fold in apples. Spoon batter into muffin cups until 3/4 full. Bake for 12-15 minutes.
